RESEARCH INTERESTS
Develop research with breadfruit not only as an alternative but also as a "functional food" product for the public. Other research interests include testing the reliability and validity of feeding tools for infants and adults and currently investigating DHA consumption in women of hispanic origin.

2007-Individual-Michigan Dietetic Association Public Relations Awards.This is a prestigious award because it indicates that through some major endeavor the visibility of the dietetics profession has been enhanced.
This award has been granted as a result of her research, Properties of Extruded Products from Breadfruit Flour. Compatible Technologies, non profit organization dedicated to the welfare of underdeveloped nations, read her publication. As a result, they invited Carmen to further improve the cereal's nutritional profile so it could be offered for human consumption and help reduce malnutrition. They succeeded and presently it is being tested in Haiti.
